Applesauce Spice Cake

I made this cake for Lucy's 1st Birthday party. She seems to be allergic to eggs, so this was the perfect recipe. Well, it was very popular and I was asked to post the recipe, so here it is. This is another recipe from the "Battling the MSG Myth" cookbook. Such great recipes!

ingredients
DRY
2 cups sugar
3 cups flour
2-1/4 teaspoons baking soda
1/2 teaspoon baking powder
1 teaspoon ginger
1/2 teaspoon cloves
1/2 to 1 teaspoon allspice
2 teaspoons cinnamon
1/2 teaspoon nutmeg
1 teaspoon salt

WET
1/4 cup molasses
1/2 cup oil
2 tablespoons vinegar
1 cup applesauce
1 cup water
1 to 2 cups raisins (optional)

preparation
Combine all dry ingredients (sugar, flour, baking soda, baking powder, ginger, cloves, allspice, cinnamon, nutmeg, salt).

Make 3 indentations. In one, put molasses and oil. In another, put the vinegar. In the third, put in the applesauce. Pour water over all and whisk to blend. Add raisins if desired. Bake in 10" x 15" pan or 9" x 13" pan for 40 to 45 minutes. Top with cream cheese or brown sugar frosting, or eat plain.
